Recipes for Mothers Day

My family wanted the recipes we used for mothers day.

Sensational Spiced Salmon
2 TB brown sugar
4 tsp chili powder
2 teaspoons grated lemon peel
3/4 teas ground cumin
1/2 teas salt
1/4 teas ground cinnamon
4 salmon fillets (4 ounces each)
Combine the first six ingredients; rub over salmon.  Place in a large baking dish coated with nonstick cooking spray.  Bake, uncovered, at 350 for 15-20 min. or until fish flakes easily with a fork.

Rice Pilaf
1/2 cup uncooked fine egg noodles, broken
2 teas canola oil
1 TB butter
1 cup uncooked long grain rice (I use brown and some black rice)
3 garlic cloves, minced
2 c water (increase water by 3/4 cup)
2 teas low sodium chicken bouillon granules
1/4 teas salt
1/4 teas pepper
1/4 c minced fresh parley (I used 1 TB dried)
In a large saucepan, cook and stir noodles in oil and butter until lightly browned.  Stir in the rice and garlic; cook 2 min longer.  Add the water, bouillon, salt and pepper.  Bring to a boil.  Reduce heat; cover and simmer for 13 min.  Stir in parsley; cover and cook 2-5 min longer or until rice is tender.  Brown rice will take longer to cook.
